RECIPE WEDNESDAY: Raisin Puffs with lemon sauce

RAISIN PUFFS

WITH

LEMON CREAM SAUCE

  • 2 eggs, well beaten
  • 2 tablespoons sugar
  • 1 cup milk
  • ¼ teaspoon salt
  • 2 cups flour
  • ¾ cup seeded raisins
  • 3 teaspoons baking powder
  • 1/3 cup butter

Cream butter and sugar, and add beaten eggs. Sift a little flour over raisins, mix and sife remainder with dry ingredients and add alternately with milk to first mixture. Fold in raisins last. Have buttered cups in steamer over boiling water, fill 2/3 full with batter and steam 25 minutes. Serve with lemon crean sauce. Any fruit, jam or prserve may be used instead of raisins if put in cups between layers of dough.

LEMON CREAM SAUCE

Beat 2 eggs with 1 cup sugar until very light. Add juice of 1 lemon and grated yellow of ½ of it. Beat in bowl set in boiling water until sugar is dissolved and sauce lukewarm. Remove, add ½ cup of not too hot milk, beat 1 minute and serve.
