Recipe Wednesday: Glazed Louisiana Yams

Glazed Louisiana Yams

  • 1 can yams
  • 7 T. margarine
  • 3 T. lemon juice
  • 3 T. honey or 4 1/2 T. brown sugar
  • 1/ 1/2 t. grated lemon rind
  • 3/4 c. cherries (fresh or canned)

Drain syrup from yams and simmer until reduced by one-half. Add remaining ingredients and boil 2 minutes. Add yams and simmer until glazed and translucent. Add cherries to syrup during last 5 minutes of cooking and serve around yams for garnish.
