Glazed Louisiana Yams
- 1 can yams
- 7 T. margarine
- 3 T. lemon juice
- 3 T. honey or 4 1/2 T. brown sugar
- 1/ 1/2 t. grated lemon rind
- 3/4 c. cherries (fresh or canned)
Drain syrup from yams and simmer until reduced by one-half. Add remaining ingredients and boil 2 minutes. Add yams and simmer until glazed and translucent. Add cherries to syrup during last 5 minutes of cooking and serve around yams for garnish.
